The Mount Conero has always represented the ideal hillside habitat for the culture of olive trees and consequently for the processing of olives and oil. And the mill, the emblem of our company, is its best evidence.
Therefore, relying on strong secular traditions, we took the decision to plant a new organic olive grove in the Conero Park and to embrace the production of monovarietals.
Each olive variety will be harvested and pressed separately in order to respect the different characteristics and the different harvesting periods which aren’t obviously the same for each cultivar.
This allows us to obtain some excellent extra virgin olive oils, each of them with their own organoleptic characteristics.
Our production is enriched by the Rosso Conero doc “Kyma Oros”, the vineyard with Montepulciano grapevines is facing east, on the slopes of Mount Conero, just above the Sassi Neri beach. This guarantees sunlight and sea breeze which will convey some fresh and pleasant notes to the wine.

PENDOLINO

Medium-light fruity with herbaceous tones and a prevailing scent of fresh almond. To the taste a prevailing sweet sensation, are virtually non-existent the bitterness, whereas the spiciness is decisive and persistent in the throat. This is an oil with a high content of polyphenols and tocopherols.
It’s excellent to use with dishes with a delicate flavour, such as fish, meat or fish carpaccio, chickpea and shrimp soups, raw seafood starters, courgette carpaccio with Grana Padano cheese, steamed vegetables and salads.

LECCINO

Medium-light fruity with herbaceous tones and a prevailing sensation of almonds. To the taste predominant sweet and harmonious hints with pleasant bitterness and spiciness notes.
It’s excellent to use with dishes with a delicate flavour, such as fish of the Adriatic Sea, white meats, steamed vegetables and salads.

RAGGIA

Medium-light fruity with herbaceous hints and a marked scent of green almonds. To the taste an initial sweet sensation with medium-light bitterness and spiciness hints. Good fluidity thanks to a high content of oleic acid.
It lends itself very well to many combinations, starting from roasted fish to first courses, side dishes, grilled red meats, bruschetta, vegetable soups and boiled legumes.

CORONCINA

Intensely fruity, unquestionably herbaceous with a hint of artichoke. To the taste the initial sweet sensation gives place to a bitterness and a spiciness of a high intensity and persistence. The fluidity is good and at the end of the tasting a pleasant artichoke sensation, which is a characteristic of this variety, is left behind in your mouth.
In cooking the best combination of the Coroncina oil is with legumes, soups, bruschetta, polenta, fresh cheeses (primosale pecorino), meats and grilled vegetables.

MIGNOLA

A very special oil with a gold yellow color. Middle fruity aroma, essentially green, with hints which remind us of the freshly cut grass and at the same time of the sweet hint of the wild berries. In the mouth it underlines at first a raspberry candy sensation which makes room for a strong bitter note, which gradually increases and persists after the tasting; a pleasant spicy note is revealed in the throat; the polyphenols content is very high.
Suitable for strong flavored dishes, meats, fish and soups.

KYMA OROS

Intense ruby wine with violet touches, compact and firm, with the oxygenation it colours the glass to indicate the presence of antocyanins. Elegant smell Olfatto, limited at first and then complex with wild berries, blackberry, cherry, cassis, red Tea rose, cyclamen, violet, wisteria, geranium, undergrowth, wet leaf, mineral, pumice which recall the sea and salt smells.
In the mouth partly peppy, juicy, young tannin but evident with fresh and fruity aftertaste.
Energy coupled with lightness, vibrant wine.
